Crafted in the heart of the Dolomites mountains, this Il Villaggio DOP extra aged Piave cheese is the perfect choice for your cheese board. Named after the Piave River, which runs from the Alps to the Adriatic Sea, this cheese is made in the province of Belluno, the northernmost part of the Veneto region. This area is known for its beautiful alpine environment, with mountains covered in ancient forests and steep valleys filled with lush greenery and pastures. In order to ensure that only the finest cheese receives the DOP stamp, the production process is heavily regulated from start to finish. This Piave cheese is made from the raw rBST-free milk of cows that graze in the alpine pastures and is aged for at least 1 year, allowing the flavors to develop to perfection.

With flavors and consistency often compared to Parmigiano Reggiano, Piave cheese boasts a slightly softer and smoother texture with no crystallization. It features sweet and nutty flavors with a full-bodied taste that naturally pairs well with full-bodied red wines such as zinfandel. On charcuterie boards, this cheese can be paired with honey or jam for a sweet and tangy bouquet of flavors. This firm cheese has a hard, easy-to-crumble texture that makes it perfect for grating and incorporating into classic Italian recipes. Combine it with Pecorino Romano, fresh-cracked black pepper, and starchy pasta water and toss in bucatini noodles for flavorful, creamy caccio e pepe.
